Helpful Tips
This recipe requires 5-12 hours of fermentation time so plan accordingly. I usually do everything the night before and leave the dough, covered on the counter overnight, and bake in the morning.
If you are planning for fresh, hot dinner rolls in the evening, begin making them early in the morning.

Ingredients
- 1 cup milk (warmed)
- 2 tbsp butter (melted)
- 3 tbsp sugar
- 1 tsp salt
- 1/2 cup active sourdough starter
- 3 cups and 2 tbsp all purpose flour
To brush the dinner rolls after baking:
- 1-2 tbsp melted butter
Instructions
In a large mixing bowl, combine milk, butter, sugar, salt, sourdough starter and flour.
Start with a Danish hook, and mix well.
Once the dough starts getting more firm, switch over to hand kneading for about 2 more minutes.
After everything is combined, and there are no dry bits left, cover your bowl and set aside.
In 30 minutes, perform a set of stretch and folds.
Repeat 3 more sets of stretch and folds, 30 minutes apart.
After completing the last stretch and fold, cover the bowl again, and set aside in room temperature for 5-12 hours (OR over night).
After 5-12 hours, once the sourdough dinner roll dough has doubled in size, prepare your glass pan by oiling it.

Next, using a bench scraper, divide your dough into 8 pieces. Shape each piece into a ball, and smooth it out on the countertop.




Place all the dinner rolls onto the oiled glass pan.

Cover the dinner rolls with a tea towel and set in a warm place for about 1-2 hours.


Preheat oven to 375 degrees Fahrenheit.
Bake for 25-30 minutes, or until golden brown.

Once sourdough dinner rolls are baked, brush the tops with melted butter.
