Granola is definitely a household favorite breakfast or snack for many, so it’s only natural for every household to have a go-to easy and delicious homemade granola recipe on hand!

Breakfast can be ready in no time, if you want to serve granola for that morning! This granola is quick to make, and can be made in advance, or on the morning that you want to serve it.

Ingredients
1/2 cup melted coconut oil
1/2 cup honey (or maple syrup)
1 tsp vanilla extract
4 cups of old fashioned (or rolled) oats
1 tsp ground cinnamon
2 cups of raw pecans (or substitute another nut or seed)
1 tsp sea salt
1 cup dried fruit (to be added after baked and cooled)
Instructions
Preheat oven to 350 degrees Fahrenheit. Place parchment paper on a baking sheet.
In a small saucepan, slightly melt the coconut oil.
Then add in the honey and vanilla extract and mix together in saucepan. Set aside.
In a separate large bowl, mix together oats, nuts, salt, and cinnamon.

Give your wet ingredients another good mix, and pour over the dry ingredients.

Mix all ingredients well together, making sure that all dry ingredients get covered in the coconut oil and honey mixture.
Place the granola mixture onto the baking pan, evenly distributing everything.


Bake for about 25-35 minutes, or until golden. Stir the granola about halfway during bake time.

If you like yours more toasted (like my family does!) then just increase the time slightly, but keep an eye on it, not to over toast it. Keep in mind that granola will harden more as it cools down.
Allow the granola to cool down for at least 30 minutes, and then add in your dried fruits. Stir the fruits evenly into the granola. Be sure to add the dried fruits after baking, not before. Baking the dried fruit may cause it to become hardened.

Granola is the perfect breakfast food. It is delicious with yogurt. Try making a yogurt parfait for breakfast! Just put some plain yogurt into a bowl, pour some granola over the yogurt, add in some fresh fruits, and top with a little maple syrup!
