Stand mixer (I use a Kitchen-Aid)
Large bowl
Plastic wrap or large plate (to cover bowl)
Small bowl
Brush (for egg wash)
Ingredients
- 1/2 cup active sourdough starter
- 4 tbsp melted butter
- 3/4 cup warm water
- 2 tbsp honey
- 1 egg
- 3 cups all-purpose flour
- 1 tsp salt
Additional:
- 1 tbsp olive oil to grease bowl
- 1 tbsp olive oil to grease glass pan before baking
Egg wash:
- 1 egg
- sesame seeds (I also use “Everything Bagel” seasoning
Instructions
Get your stand mixer and place the starter, butter, water, honey, egg, flour, and salt into the mixing bowl.
Using the dough hook attachment, begin mixing all the ingredients together on medium speed.
Continue for about 5-7 minutes or until dough looks smooth.
Transfer the dough into a greased bowl and cover (I usually just use a large plate to cover the bowl). Leave the dough to sit on the counter for 6-8 hours.
After 6-8 hours, transfer the covered bowl with the dough into the refrigerator overnight.
The next day:
Using a bench scraper, divide the dough into 8 equal parts.

Roll each piece of dough into a ball, building tension as you shape them.
To build tension, simply push the ball of dough on the table top away from yourself, and then towards yourself, several times.

Place each ball of dough into the glass baking sheet.

Cover with a tea towel and let the buns rise for 1-3 hours.

Once the dough has doubled in size, pre-heat oven to 350 degrees Fahrenheit.
In a small bowl, crack an egg and use a fork to whisk it until blended well.
Using a kitchen brush, apply the egg on top of each hamburger bun.

Sprinkle the tops with sesame seeds.
Bake the hamburger buns at 350 degrees for 25 minutes, or until the tops are golden.

How to Serve
My family really enjoys these hamburger buns with beef patties or with seasoned ground beef as sloppy Joe’s!
To serve as humburgers, be sure to add on some fresh toppings such as lettuce, tomatoes and onions!
