Even though my whole family LOVES mayo, I stopped buying store-bought mayonnaise. This is because of the ingredients, especially the soybean oil. Even though the soybean oil version is the one my family liked best, taste-wise. I tried buying other, healthier versions of mayonnaise for my family, but they never liked the taste of avocado or olive oil in store-bought mayo. One of my daughters even said it tastes like wood!
So I went on a mission to make the perfect tasting mayonnaise, that tastes just like the store-bought (soybean oil) one. At first, my family and I were NOT loving the taste. This easy and delicious homemade mayonnaise recipe took me many months of trial and error.
I tried everything from avocado oil, to extra virgin, to light olive oil. Let me tell you, I have discovered that the secret is in the oil! If you do not enjoy the strong taste of olive oil, be sure to use very light olive oil. Avocado oil in mayonnaise tasted metallic to my family and me.
Once I achieved the perfect taste and recipe, my family now says how much my easy and delicious homemade mayonnaise tastes just like the store-bought mayo.

Notes
An immersion blender is required for this recipe, a regular hand whisk or mixer will not work.
If your mayonnaise is too runny, just add in a little more oil, pouring in slowly, while continuing to blend.
You may need another person to hold the jar while you blend, so you may blend with one hand, and pour the oil with the other. Otherwise the jar will be slipping around.
A tall jar is best to make mayonnaise in. If you use something wider, like a bowl, it will not allow the mayonnaise to emulsify the oil and other ingredients as it needs to.
The jar you use must be wide mouth, otherwise your immersion blender may not fit in the top.
If you are making a double portion, make sure to get the 32 oz mason jar so all the contents will fit comfortably.

Ingredients
- 1 egg (raw)
- 1 tbsp white vinegar
- 1 cup extra light olive oil
- 1/4 tsp sea salt
Instructions
- Take your jar, and add in raw egg, vinegar, and salt.


Please note that I am making a double portion in my pictures.

- Pour the oil into a glass measuring cup.

- Start blending with the immersion blender, and slowly pour in the oil, making up and down motions with the blender.



- Blend for 1-2 minutes, until the mayonnaise is white and fluffy.
