Easy Cheesy and Delicious Scalloped Potatoes

This easy, cheesy and delicious scalloped potato recipe is absolutely amazing! So perfect for a cozy, rainy day, or just for days when you have an especially large appetite! These potatoes definitely will not dissapoint!

Tools You May Need

  • Cast iron skillet
  • Hand whisk
  • Ladle
  • Glass 9×13 pan
  • Large mixing bowl
  • Cheese grater
  • Cutting board
  • Knife
  • Potato peeler
  • Measuring spoons and cups

Ingredients

  • 7-8 large potatoes (I mix Russet and Gold)
  • 4 cups of cheese (I did a mix of Dubliner and Cheddar)
  • 1 cup chives
  • 2 cups crumbled bacon
  • 4 tbsp butter
  • 3 garlic cloves
  • 4 tbsp flour (all-purpose)
  • 2 cups chicken broth/stock
  • 2 cups heavy cream
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

Pre-heat oven to 400 degrees Fahrenheit.

Begin by chopping the chives. Set aside.

Next, shred the cheese. Set aside.

Peel the potatoes and rinse them under water.

Then, slice the potatoes into discs, about 1/8 inch thick. Set aside for now.

Next, begin making the gravy.

Place cast iron skillet onto stovetop, and bring to a medium heat. Melt butter.

Next, press 3 garlic gloves into the melted butter, and add in the flour. Whisk together until fully mixed.

Cook for about 1 minute and proceed to add in the chicken broth/stock, and the heavy cream.

Whisk everything together until smooth. Add in salt and pepper, and cook for another 2-3 minutes, whisking regulary.

Remove from heat and set next to where you are working with your potatoes.

Now, begin layering the potatoes into rows.

Once the first layer is completely laid out, pour some of the gravy over the top of the potatoes, making sure to get every potato in the gravy.

Then, add on the cheeses, chives and bacon.

Repeat these layers 2 more times.

Cover your baking pan with foil, and bake at 400 degrees Fahrenheit for about 45-50 minutes.

Last, remove the foil, and bake for an additional 45 minutes.
