The reason I like to use bone-in chicken is because this way, the chicken and veggies cook in the broth created from the chicken bones. This makes for a much tastier meal.
If you don’t want to use pre-marinated chicken wings, you can also use chicken drumsticks or plain bone-in chicken wings. You would just have to season them before adding them into this one pan meal.
Variations
This recipe calls for baby potatoes, brussels sprouts and sweet potato, but you can absolutely change things up depending on what veggies you currently have at home.
You are welcome to even exclude the chicken for a vegetarian option, but the chicken is definitely recommended.
Switch out the baby potatoes and use large russet potatoes or gold potatoes instead if you’d like, you would just peel and dice them before adding them into the glass pan.

Ingredients
3.5 pounds of baby potatoes (I prefer Costco baby potatoes)
2-3 medium sweet potatoes
1.5 cups of brussels sprouts
1/2 cup olive oil
2 teaspoons salt
2 teaspoons paprika
3 cloves of garlic
2 lb of marinated chicken wings (I like the ones from Costco)
Instructions
Wash the baby potatoes and brussels sprouts.
Peel and wash the sweet potatoes.
Chop the baby potatoes in half and add them into the glass pan.
Next, cut the brussels sprouts in half, then add them into the glass pan over the potatoes.
Chop the sweet potatoes into small cubes (just a little smaller than the baby potatoes) then add them into the glass pan.
Drizzle about 1/2 cup of olive oil, add salt and paprika. Squeeze in fresh garlic and mix everything well.
Once everything is mixed well, place the raw marinated chicken wings on top of the potatoes and veggies. Lay the chicken out side by side.
Last, cover your pan of chicken and veggies with aluminum foil and bake at 425 degrees for 30 minutes.
Once 30 minutes have passed, remove the aluminum foil and bake for an additional 30 minutes.
After an hour of baking, be sure to check the internal temperature of the chicken. If the temperature has reached 165 degrees, remove the pan from the oven.
