Because of this, homemade granola bars are an amazing and must-have snack for our household. If you have children that go to school, this is a great snack to pack in their school lunches!
These easy to make homemade granola bars are packed with protein, which is a huge bonus. This is because the kids not only enjoy the flavor, but it fills them up until it’s time for the next meal. Once I started making these granola bars, I never stopped! This is a regular weekly snack that I make now in my household.

Tools You May Need
Danish hook (or a mixing spoon, but I’ve found this tool to be so comfortable for working with this type of mixture.)
Cookie sheet or pan (8×8)
Parchment paper
Ingredients
2 1/2 cups of old fashioned oats
1/2 tsp salt
1 tsp vanilla extract
1/2 cup mini chocolate chips
1 cup peanut butter (I use a creamy organic peanut butter)
1/2 cup nuts of choice (I prefer peanuts. You can also chop them if you don’t like a larger texture in your bars)
1/2 cup raisins
2/3 cup honey
Instructions
Place all the dry ingredients into a large mixing bowl, and mix everything well.
Pour the vanilla extract, peanut butter and honey into a small saucepan. Warm them over low/medium heat, until just slightly warm. This makes these sticky ingredients easier to work with and mix into the dry ingredients.
Pour the mixture over the dry ingredients and mix until everything is incorporated well. This may take several minutes. I like to use the Danish hook, I feel like it does a really good job mixing this type of texture really well.
Once all the ingredients are mixed well, transfer your mixture onto a cookie sheet or pan that is covered with parchment paper.
Next, evenly distribute the granola mixture over the cookie sheet, filling in the corners. After you have done this, place another piece of parchment paper over the top.
Using a flat cup, (I simply use a measuring cup) press firmly down on top of the parchment paper, moving the cup all around to evenly press down the mixture.
Once the mixture is fully flattened and packed down, place the cookie sheet with the mixture into the refrigerator for an hour. The longer the bars are in the refrigerator, the more they will harden and keep their form.
After your no bake granola mixture has chilled for an hour, they are now ready to be cut into bars. I use a bench scraper for this, as I have found it to be much easier than using a knife.
Tips
When cutting the granola bars, I cut a little less than half of the sheet into mini bars for our toddler. This is a great tip to keep in mind if you have littles ones in your household.
If you’d like the bars a little more on the dryer side, just use slightly less honey or peanut butter.
